3-Ingredient Salsa Chicken

This is the one I made on repeat when my kids were little. Three ingredients, a slow cooker, and you walk away from it. It shreds into tacos, bowls, or a salad, so one batch covers most of the week. The macros below are for the chicken by itself, before whatever you put on top.
Macros are approximate, per serving. Always double-check against your own tracker.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 packet taco seasoning
- 1 jar salsa (16 oz)
- Optional toppings: shredded cheese, avocado, lime, cilantro, pico de gallo, extra salsa
- To serve: tortillas, taco shells, tortilla chips, rice, or a bed of greens
Directions
- Place the chicken in the slow cooker in an even layer.
- Sprinkle the taco seasoning evenly over the top.
- Pour the salsa over everything, making sure all of the chicken is coated.
- Cover and cook on low for 6 hours, until the chicken shreds easily with a fork.
- Shred the chicken directly in the slow cooker using two forks.
- Let it rest in the sauce for 10 to 15 minutes before serving so it soaks the sauce back up.
- Serve over rice, in tortillas or taco shells, over tortilla chips, or on a salad, with whatever toppings you like.
Tip: One batch covers tacos one night and bowls or a salad the next. It also freezes well in portions.
