Pumpkin Spice Protein Pancakes

Kid-approved and mom-approved. These pumpkin spice protein pancakes are a fall staple in our house. They taste amazing, keep us full, and bring that cozy fall flavor everyone loves.

Ingredients
- 1/2 cup high-protein pancake mix
- 1 scoop Level-1 Pumpkin Spice Latte protein
- 1/2 cup pumpkin puree
- 1/2 tsp cinnamon
- 1/2 to 1 cup water, to desired consistency
Directions
- In a large bowl, mix all ingredients until you have a smooth, pourable batter. Add the water gradually until you reach your desired consistency.
- Heat a nonstick skillet or griddle over medium heat and lightly grease it.
- Pour the batter onto the skillet in individual pancake-size spoonfuls.
- Cook until bubbles form on the surface, then flip once and cook until golden on both sides.
- Serve warm, topped with sugar-free syrup, honey, or chopped pecans.
